Lemon Coconut Snack Bites

This recipe is the perfect on-the-go healthy snack or a no-guilt remedy for a sweet tooth.  These snack bites turned out so good that we keep going back to the pan to snag “just one more” after they came out of the oven.  And as always, they are gluten free!

Lemon Coconut Snack Bites

  • zest of 1 lemon
  • juice of 2 lemons (about 3 tbsp)
  • 1/2 tsp sea salt
  • 1/2 cup tapioca flour
  • 1/2 cup brown rice flour
  • 1-1/2 cups shredded coconut
  • 1 egg
  • 1/4 cup coconut oil
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract

 

  1. Preheat oven to 350 degrees.
  2. In a large bowl mix together egg, coconut oil, lemon zest, and lemon juice.
  3. Add sugar and vanilla, mix well.
  4. In a small bowl combine flours and salt, stir into wet mixture.
  5. Stir in shredded coconut.
  6. Form into balls (1 tbsp each) and place on a pre-greased baking sheet.
  7. Bake for 12 minutes.
